Japan

Japan is the birthplace of modern ramen. While Chinese-style wheat noodle soups existed in port cities like Yokohama and Kobe since the late 19th century, ramen as a distinct Japanese dish emerged in the post-war era. Momofuku Ando invented instant ramen in 1958 (Chicken Ramen by Nissin), and Cup Noodles followed in 1971 — both among the most impactful food inventions of the 20th century.

Japan's instant ramen market is the most sophisticated in the world, with hundreds of regional and seasonal varieties, premium 'shop-style' kits that include multiple sachets (soup base, oil, dried toppings), and an annual release cycle rivalling the fashion industry. Major manufacturers include Nissin, Toyo Suisan (Maruchan), Sanyo Foods (Sapporo Ichiban), Myojo, and Acecook.

Japanese instant ramen tends toward subtlety: lighter seasoning, more nuanced broth, and a focus on noodle texture (fried vs. non-fried, thick vs. thin). Quality control is exceptionally high.
