Hong Kong has one of Asia's most mature instant-noodle markets, anchored by two local heritage brands — Doll (Winner Food Products, 1968) and Sau Tao (Sun Shun Fuk Foods, 1960) — plus Nissin's Demae Ramen, which holds roughly 60-70% of the local market. Nissin acquired Doll in 1989, giving the Japanese group a commanding domestic position while preserving Doll's distinctly Cantonese flavour profile and packaging.

Hong Kong flavours lean Cantonese: satay beef, abalone & chicken, wonton soup, tan-tan, artificial chicken, and XO sauce. Sau Tao's Instant Noodle King bowls and Nissin Demae's Tokyo Shoyu, Black Garlic Oil, and Sesame Oil variants are the most widely exported. Non-fried noodles are unusually common in the Hong Kong catalogue — Sau Tao's air-dried range is a notable differentiator.

Doll's commercial breakthrough in the 1970s came from a sponsored segment on TVB's Enjoy Yourself Tonight variety show, a partnership that helped push Hong Kong instant noodles into roughly 50% domestic share before Nissin's acquisition. The Hong Kong market has also historically been the proving ground where Nissin tested export formats before rolling them out to the broader Chinese and South-East Asian markets.
