Jjajang

Jjajangmyeon (짜장면) is a Korean adaptation of the Chinese zhajiangmian — noodles topped with a thick sauce of chunjang (black bean paste), diced pork or seafood, and vegetables. It is one of Korea's most popular delivery and takeout dishes.

The instant version — jjajang ramyeon — uses a thick, dark sauce sachet rather than a soup broth. The noodles are typically boiled and drained (not served in soup), then mixed with the sauce. Brands like Paldo Jjajangmen, Nongshim Chapagetti, and Ottogi Jjajang Bokki are staples.

Key characteristics: no broth (dry-style), thick black-bean sauce, sweet and savoury flavour, often served with a fried egg or pickled radish.
